The Polito family harness thermal mass to create an efficient, environmentally friendly, and energy-saving oven. The highest quality materials are used to ensure achieve thermal mass is achieved. When thermal mass is achieved, the oven captures and retains its heat. This helps to reduce the amount of wood being burned and allows for the oven to work at maximum efficiency. The key to achieving this lies in the cooking floor, which is 50mm thick and has a minimum aluminium content of 38%. Each oven reaches a temperature of 1350 degrees Celsius.
